Mexico - Chiapas
Our Mexican Chiapas coffee comes from a group of small producers in the town of Siltepec in central Chiapas. This strictly high grown raw coffee was produced under traditional farming methods, shade grown coffee, craft de-pulped, fermented, washed and sun dried. The local population of Siltepec depends on agriculture for its livelihood and coffee is at the heart of it. Siltepec’s coffee farms are enriched by the town’s proximity to the El Triunfo Biosphere Reserve. El Triunfo’s cloud forest is one of the most diverse areas for tree species in North and Central America. The forests act like a sponge, absorbing moisture from the rain and dense mist, thus providing nourishment to area farms.
