Encore Coffee & Chocolate is a small-batch roaster and award-winning chocolate maker dedicated to flavor and freshness.

How It All Started

Encore Coffee & Chocolate began with a single passion: better coffee. What started as a weekend hobby over 20 years ago—roasting beans in a garage—quickly grew into an obsession with sourcing, flavor, and craftsmanship.

In 2016, we officially launched Encore as a small-batch roastery just outside Kansas City. By 2022, our curiosity had expanded into bean-to-bar chocolate, where the same hands-on care now goes into every bar we craft from ethically sourced cacao.

We’re still small. Still roasting. Still refining. And still obsessed with delivering the best possible cup and bite, every single time.

We roast in small batches on our 12-kilo Millennium roaster, bringing out the unique character of every bean—fresh, flavorful, and never overdone.

Roasted with Intention

Our story starts with coffee. In the early 2000s, we were home-roasting single origins in a popcorn popper—chasing clarity, sweetness, and complexity one batch at a time. It wasn’t about trends or equipment back then. It was about learning what made a cup special.

Two decades later, we’re still just as obsessed. Today, we roast on a 12-kilo Millennium machine in small, carefully monitored batches. Every origin gets its own roast curve. Every profile is dialed in by hand. We taste everything—again and again—until we know the coffee is saying what it’s meant to say.

Our Signature Blends are designed to be approachable and reliable: the kind of coffee you can brew every morning and still look forward to. But behind the scenes, they’re built from fresh, seasonal single origins—so the cup stays balanced, nuanced, and full of life.

This is coffee made with purpose. No shortcuts. No bitter, burnt cover-ups. Just clean, character-driven flavor you can count on.

Chocolate from Scratch

We didn’t set out to make chocolate. We just wanted to learn how it worked. One origin led to another, and before long we were deep in the world of cacao — sourcing raw beans, learning traditional methods, and tasting every step of the way.

Today, we make every chocolate bar from scratch at our Kansas City facility. That means roasting cacao beans, refining them with ethically sourced sugar, and carefully conching and tempering each batch to bring out the best of every origin. We don’t re-melt mass-produced couverture. We do it the long way — because that’s the only way to capture real character.

Our efforts have earned national recognition, including multiple Craft Chocolate Challenge awards. But to us, great chocolate isn’t about gold medals — it’s about flavor, texture, and that quiet wow when someone takes their first bite.

From bean to bar, it's a slow, intentional craft. And we love every step of it.

Place your order anytime through our online store for shipping across the U.S. If you’re local to Kansas City and want a specific roast, be sure to place your order by Monday at midnight. We roast fresh every Tuesday, with local pickups available Thursday or Friday between noon and 5 pm.

Just stopping by? We keep a small selection of 12 oz coffee bags available at the counter each week — along with our award-winning chocolate bars, seasonal gifts, t-shirts, and home brewing accessories.
