How We Roast Coffee

Our step-by-step process for sourcing, cupping, and roasting specialty coffee.

It All Starts at the Farm

We work with a small group of trusted importers who source from farms and cooperatives that prioritize sustainability, quality, and transparency. While we return to many producers year after year, we still evaluate each harvest on its own merit. That means cupping every lot, whether it's a familiar origin or a brand-new find.

Coffee quality is a direct result of farm-level care — from variety selection to picking practices and processing methods. Our role as roasters begins long before the roast — it begins with choosing partners who respect the craft as much as we do.

Cupping & Selection

Before a coffee ever makes it into our roaster, it goes through a rigorous cupping and evaluation process. We taste every lot to assess aroma, acidity, body, sweetness, and balance.

We don’t rely on importer descriptions or certificates alone. If it doesn’t meet our flavor and quality standards in the cup, we don’t buy it. Cupping is how we stay consistent, curious, and confident in every bean we bring in.

Roasting with Purpose

Every coffee we roast is different — and we treat it that way. Origin, altitude, bean density, growing conditions and processing method all influence how a coffee behaves in the roaster and how it tastes in the cup.

We don’t use formulas or roast profiles that apply to every bean. Instead, we evaluate each lot on its own terms. Every choice is intentional, based on what the coffee is telling us.

Drum Roasted, Logically Crafted

We roast all of our coffee in-house using a US Roaster Corp 12K Revolution drum roaster. This machine gives us the consistency of gas-fired drum roasting with the control needed for small-batch nuance.

Each batch is tracked and logged with Artisan software, allowing us to monitor temperature, rate of rise, and development time in real time. This data helps us make adjustments on the fly and replicate great results across batches. It’s not automation — it’s precision, guided by experience.

Packaging for Freshness

After roasting, each batch is rested briefly to allow natural CO₂ to escape. We then package to order in foil-lined bags with one-way valves that continue to release gas without letting air in — keeping your coffee fresh without compromising flavor.

Our coffees are available in 12 oz, 2 lb, and 5 lb bags. Whether you brew a cup a day or go through pounds a week, you’ll find a size that fits your routine. Every bag is labeled with the roast date so you always know when it was crafted.
