For January, we are featuring a washed processed coffee from the Soconusco, Chiapas region of Mexico. This region is in the southwest corner of Chiapas along the border of Guatemala.  This area has ideal conditions for cultivating great coffee; the rich volcanic soil, mild climate, and plenty of rainfall are optimal for coffee growing.  Most Chiapas farmers are small farms that hand-pick their coffees to ensure optimal quality. Coffee is then brought in parchment to be dry-milled, sorted for quality, and prepared for export.
