Cajamarca has a mild highland climate, and the area has very fertile soil perfect for growing coffee. This washed processed coffee is from a regional collection of lots around Peru. Coffee cherries were machine cleaned and processed, and after the coffee was dried, it was sorted by color and density to ensure that only the best beans remained.
