Uganda - Kapchorwa
This coffee is from the Kapchorwa mill located on the western side of Mt. Elgon. Mt. Elgon is an extinct volcano spread across the border of Uganda and Kenya, through its highest point, called Wagagai, is on the Uganda side. The Kapchorwa mill carefully separation lots and only accepts harvests that are 95 percent red cherry which results in excellent coffee.
This season, the team at the mill was excited to have a new Penagos Ecopulper, which can de-pulp 2,500 kgs of cherry per hour. Accepted cherry was batch by batch, de-pulped and then fermented 12 hours overnight. The next morning, the coffee is floated in the washing bay, where mucilage and any remaining floaters are removed. The parchment was then placed outside in dripping trays to dry for the rest of the day, and a combination of sun and mechanical drying were used to lower the moisture content to 12 percent.
